Thanksgiving dinner for two

I’ve not posted in a very long time. I’ve got nothing to say for myself.

This was our Thanksgiving day meal:

  • Turkey, slow roasted, all night long, with sage, butter and rosemary.
  • Cranberry sauce with apple, orange, raisins and ginger. (no sugar added and very YUM)
  • Pseudo stuffing made with quinoa, amaranth, celery, garlic, ghee, apple and walnuts.
  • Roasted potatoes (for Paul…I don’t eat the tubers though I do have fond memories of them cooked like this: rosemary, garlic, olive oil)
  • Mixed green salad with lots of arugula
  • And a pumpkin pie — make with butternut squash for low histamine with a nut based crust (100% from scratch)

Yeah…it’s over…had to do it early as I don’t last long…as it was I pulled off an amazing feat…and actually had fun doing it…a holiday miracle…

I’m an Italian mother even when there is no one to mother!

It was just me and my husband…we’ll have leftovers for days.

    It looks fabulous. I haven’t had a turkey for quite a while. Turkeys are rare birds in Europe. I even passed up going to our church tonight for Thanksgiving Dinner since I would have had to make a dish, and I’m just not up to doing it. The church gets the really swanky hotel next door to it to cook two of the biggest turkeys I have ever laid eyes on. Then, two chefs are sent from the hotel to carve it.

    Are yams on your diet? I rarely eat potatoes anymore because of the high glucides, but yams are low glucide and I have acquired a taste for them. Mind you, they are not the same as potatoes that have been baked in turkey drippings. I love arugula. Here we call it roquette. Where has it been all my life?

      Oh wow, Rossa…I didn’t know you were on any sort of subscription for this blog. What a nice surprise.

      I’ll be able to eat yams again eventually but not yet, so no…I’m not eating them right now. I love them.

      My day is done…I’m horizontal and wasted, but in a good mood.

      It really was a pleasant miracle to pull that off.

      do did you eat at church today? (oh woops…I somehow missed the one line where it said you WOULD not go) so I’ve answered myself. xo
